The Kurouchi Damascus Aogami #2 Kiritsuke is a hand-forged Japanese kitchen knife crafted by Kajihara Hamono, a 4th-generation blacksmith in Kochi, Japan. It delivers exceptional sharpness, durability, and cutting performance. The kurouchi finish enhances rust resistance while showcasing the traditional forging process unique to Tosa.
About the Blade Shape: A hybrid of yanagiba and usuba knives, double-bevel kiritsuke knives are multi-purpose knives with a slight emphasis on meat. While the single-bevel is traditionally used by head chefs, for the at-home cook, we recommend a double-bevel kiritsuke which measures between 210mm and 240mm long.
